Lunch Ideas

I'm needing some lunch ideas ya'll. I'm talking about for MYSELF...not the kids. They like simple foods, and I've found healthy menus for them that I rotate through, about 4 of them. But for me, on the other hand, I'd like something a little more mature, if you know what I mean. And healthy is what I'm looking for, low on the simple carbs, sugars and saturated fats, high on flavor and all things good for you. Do you have a favorite healthy lunch you make for yourself a lot? Please share:).

I sometimes buy those Pasta Salad boxes (in the salad dressing aisle). I ususally add cherry tomatoes, chicken, artichokes, anything really to make it more filling and I don't always use their dressing. Sometimes I just do oil and vinegar or make my own. :)

Of course I do all sorts of things to a salad because I could eat one of those every day! :)

Salad. With garbonzo beans, kidney beans, beets, red onion, cheese, ham, with evoo and light italian dressing.

burrito, low fat bean, light cheese, tomato lettuce and salsa on a whole wheat tortilla.

Sometimes I make fruit smoothies with a frozen berry mix, a banana, ice, nonfat vanilla yogurt, a little milk and a little OJ. There's also a few Weight Watcher's frozen meals that are really yummy that I'll pick up when they are on sale.

also, don't know where it falls on the healthy scale, but Hummus with either whole wheat flat bread or as a veggie dip is yummy!

Was checking out your blog this morning... one of my favorite things for lunch is tortilla soup with blueberry cornbread. I try to make it once a week then I have it for a few lunches. It is really easy- I will email you the recipe right now.

Hi Sarah - for me, I usually make a little bagel pizza with a whole wheat/grain bagel, a little pizza sauce, a few pieces of ham or pepperoni, and a few slices of mozarella cheese - pop it in the toaster oven - and delicious! - oh, even better with a few olives on top.
Or there's a salad - my perfect no-fail salad - add any lettuce you like to a large bowl, add olive oil, balsamic vinegar, sliced almonds and sliced green onions, feta cheese and even a handful of cashews - a little salt and pepper. Toss together - Yummy!
Also you can take a piece of fish (your favorite fillet), place on top of a square of foil, add lemon slices, sliced bell peppers and onins, some seasonings - a little olive oil, then fold into a little pocket and bake in the oven! Healthy and great tasting - and easy!

This may not be up your alley, but I will make a good size bowl of tuna, chicken or egg salad(with low fat mayo) and keep cut celery and wheat crackers out and eat on it for days. Great to munch on and keep folding laundry or doing dishes while the kids are at the table I've found!! Oh, and string cheese!!!

We've been trying to eat a little cleaner lately! Less processed foods, less sugar ...

Saturday night, (this would be a great lunch -though), I made stuffed whole-wheat pitas. I mixed the following in a skillet:

chopped chicken (leftover from a previous dinner)
fresh basil leaves
onions
chopped tomatoes
a touch of fresh cilantro
a handful of spinach leaves
2 Tablespoons of no-sugar honey dijon dressing

It was delish!

Salad... dark greens, kidney beans, feta, red onion, tomatoes, red pepper, salt and pepper, evoo and red wine vinegar... and a chicken breast sprinkled with Tony Cacheros' Cajun seasoning and seared in a hot pan... oh, my. This is almost an every day lunch for me.

A cup of chili, two TBSP. sour cream...

A cup of tomato soup with a quick whole-wheat cheese and onion quesadilla...

Tuna with homemade mayo, grated apple and onion rolled up in a giant lettuce leaf with slices of tomato and red pepper...

Heated homemade refried beans, red onions, tomatoes, red peppers, olives, sour cream, salsa, stirred together in a bowl and savored in a corner on the floor while my Little Man begs for bites.

What a great idea- we're all going to get ideas just from the comments of this post!

I usually try to have yummy sandwiches or salads or whole wheat pasta with some yummy veggies.
Here are some ideas I love:

Turkey, avocado, sprouts, tomatoes and a bit of light ranch on a whole wheat tortilla as a wrap.

Sandwiches with the whole wheat round bread rolls, a high quality, yummy mustard, and lots of veggies.

Pasta~ This is my indulgence.
Whole wheat penne with one of the following:

Fresh tomato, olive oil and basil

Artichoke hearts, kalamata olives, sauteed red onion and a little feta cheese on top

Or sauteed garlic, artichoke hearts, capers, 1 fresh tomato, and some fresh spinach wilted in.

Sometimes a warm lunch makes me feel more satisfied. :)
